Desi Carlos

 

Desi’s philosophy to eat well, feel good and look great helps people re-discover themselves and improve their health and well-being.  Desi is the director and founder of Tree of Life Nutrition and Two Greek Girls Cooking. She has a Bachelor of Science, majoring in Biochemistry and Microbiology, a Graduate Diploma in Nutrition and Dietetics and over 27 year’s industry experience. Her passion is giving practical advice on incorporating healthy eating habits into everyday life, for the individual and their families. Desi is a champion for the Mediterranean Diet and has authored a lifestyle & cook-book “Mediterranean Eating – Cook.Eat.Live” and she understands how diet can improve immunity, treat high cholesterol and heart disease, diabetes, anxiety and depression and the prevention of cancer, dementia and improving longevity of life.  Her special interest areas include fighting obesity, autoimmune diseases, gastrointestinal disorders including IBS and coeliac disease, PCOS, endometriosis, diabetes management, allergies and chronic disease management.

Richard Muir

 

Dr Richard Muir is a full time clinical Paediatric Gastroenterologist with a private practice based at the Wesley Hospital. He is also a VMO at the Mater and St Andrews Hospitals. Dr Muir graduated in Medicine from the University of Queensland and trained in Paediatric Gastroenterology at the Royal Children’s Hospital and Mater Children’s Hospital, Brisbane.  He has a special clinical and research interest in paediatric Inflammatory Bowel Disease and coeliac disease.  He also contributes regularly to clinical projects at the Wesley Hospital and the Queensland Children’s Hospital and is a co-author on numerous peer reviewed articles.

James Daveson

 

Dr James Daveson is a gastroenterologist actively involved in both the clinical care of

people with coeliac disease and also research into coeliac disease. He remains engaged in trials exploring novel therapeutics as well as novel techniques of diagnosis. Dr Daveson is an adjunct Associate Professor with James Cook University, a member of Coeliac Australia’s Medical Advisory Committee and works closely with support groups to promote better awareness, management and research into coeliac disease. Dr Daveson has been

published in internationally recognised peer reviewed journals, is the author of several book chapters and is engaged in regular presentations to general practitioners, physicians, dietitians and the general public.

Dorothea Vallianos

 

Dorothea Vallianos, is a Clinical Psychologist with over 20 years’ experience. She holds a Bachelor of Psychology with Honours, and a Masters in Clinical Psychology. She is a Member of APS College of Clinical Psychologists. Dorothea is passionate about working with people across their lifespan to make life enhancing choices that lead to a more fulfilling life. She works with children, adolescents, adults and the elderly during times of transition, loss, doubt, uncertainty and crisis. Her breadth of experience has included being a regular guest speaker and host on 96.5FM Talking Life, providing workplace, community and school based programs and contributing to books, newspapers and magazines. She utilises evidence based therapy with a focus on compassion, providing an emotionally safe space; identifying and exploring strength and problem areas; establishing goals and sourcing courage to initiate positive, effective changes.

Susan Wells  - The Gluten Free Cooking School

 

Susanne Wells is a commercial baker and runs Australia’s only dedicated gluten free cooking school in Queensland’s stunning Samford Valley.  The Gluten Free Cooking School offers a unique experience for personal gluten free discovery for all, professional development for chefs, and corporate team building exercises. Having run demonstration classes, spoken at gluten free and wellness shows, written two e-cookbooks and appeared on Channel 7’s The Great South East, Susanne has a well-rounded approach and knowledge of gluten-free baking and vast experience to pass on. A commitment to this industry and its customers prompted her to start The Gluten Free Cooking School after dedicating herself to baking with gluten free products for many years. Being a qualified pastry chef, she is able to convert traditional wheat recipes to gluten free and explore the wonders of world cuisine baking. All the food is prepared with premium, natural and unprocessed ingredients and is sourced from local suppliers. Everything is hand made on site. Aside from in house dinning Wilde Kitchen also offers a range of pre prepared meals under the Nourish Meal brand as well as catering, and a range of snacks and health based treats.
